Mexican Mole - A chicken dish with flavors of chili, herbs and chocolate
This is a very common sauce / dish in Mexico and a taste bomb of a dish. Dark chocolate, smoked chili, chicken broth and lots of good spices make the taste buds go bananas when you are served this.
Ingredients
Recipe broth
You can possibly buy chicken thighs and chicken broth
- 1 pcs whole chicken
- 1 pcs carrot
- 1 pcs chili
- 1 pcs onion
- 2 cloves garlic
- 1 tbsp coriander seeds
- water until it covers the chicken
Recipe sauce
- 2 tbsp coriander seeds
- 2 tbsp fennel seeds
- 2 tsp cinnamon
- 1 tsp whole pepper
- 1 pcs onion
- 2 pcs chili
- 3 tbsp peanut butter
- 5 dl chicken broth
- 1 dl raisins
- 1 neve tortilla chips
- 1 pcs lime (juice)
- 50 gr dark chocolate (70%)
Serve with delicious rice, homemade guacamole and limes. This is authentic Mexican food, but I have made some adjustments so we can make the dish with ingredients we have available here.
Step 1
How to make the chicken and the broth:
Start by dividing the chicken into breasts, thighs, wings and carcass. Alternatively, you can buy chicken thighs and chicken broth.
Tip: If you buy chicken thighs and ready-made broth, just put the chicken in the pan and fill up with chicken broth. Otherwise, follow the recipe with cooking and cooking time.
Step 2
Put vegetables and the carcass in a saucepan and cook for a few minutes. Add cold water and put the rest of the chicken in the pan.
Step 3
Let the chicken simmer / cook on low heat for 1 hour. Place the chicken pieces in a fireproof pan and discard the carcass. Strain to save broth. Use this in the sauce.
Step 4
Use the grill function in the oven and grill the cooked chicken for 5-10 minutes until it gets a golden and nice color.

How to make the sauce:
Start by finding a pan and put the spices in the dry pan. Bake for a few minutes until you start to smell good of spices.
Step 6
I crush them a little before I add onions and chili, and a little neutral oil. Cook until the onion has softened.
Step 7
Add peanut butter and chicken broth. Let this cook for a few minutes.
Step 8
Add this in a blender / food processor together with raisins and dried tortillas or tortilla chips.
Step 9
Run to a smooth mass and strain back into the pan.
Step 10
Now you are left with a smooth sauce with a lot of flavor.
Step 11
Add the chocolate and lime. Taste the sauce with salt and lime.

Add the sauce to the pan together with the chicken and mix well.
Step 13
Bake for 20 minutes at 200 degrees. Now the chicken is ready. Serve this delicious chicken with rice, tortilla chips, the rest of the sauce and a good homemade guacamole.
Step 14
Add a little extra lime and sprinkle with a little finely chopped chili and coriander just before serving.
