Moose Burger Patties - With this recipe they become juicy and good!

When father-in-law comes with ground moose meat, it will be moose burger patties.

  • 2 kg ground moose meat
  • 600 gram medister forcemeat
  • 1 tbsp salt
  • 4 tbsp potato flour
  • 4 dl venison broth
  • 3 tbsp coarse mustard
  • 1 tbsp dried thyme
  • freshly ground pepper

Father-in-law has been an avid hunter for many years and a positive consequence of that is that I get a lot of venison. Now I got freshly ground moose meat and then it is very good with moose burger patties. Moose meat is very lean so to get these good and juicy they need some fat. Here is a very good recipe.

Step 1

When you make moose burger patties, it is important that all the meat is really cold. Cool down the broth you are going to use to get a nice stuffing. Start by mixing the moose meat, minced meat and salt to a smooth and sticky consistency.

Step 2

Pour in the potato flour and mix again with the food processor.

Step 3

Mix together venison, mustard and spices in a separate bowl and stir well.

Step 4

Dilute with the broth mixture in the minced meat until all the broth has been fine in the moose and the dough has become a smooth and slightly sticky mince again. It is always smart to fry a small meat patty to check that you are happy with the amount of salt and consistency. If you are happy, you are now ready to make moose burger patties.

Step 5

I fry the moose burger patties in a mixture of neutral oil (rapeseed oil / sunflower oil) and real butter. Bake on medium + heat. For my induction peak, it was 7 on a scale of 1-9. Shape the meat patties with a pan or hand. I weigh the meat so all the meat patties are about 170 grams.

Step 6

It is important that you do not fry the meat patties for too long because then it will be a little dry. Bake so that both sides get a nice crust and leave on until just cooked through. It is allowed to check and taste a little along the way.

Step 7

The ones you are not going to eat right away are perfect to unpack and put in the freezer for another time. I think moose burger patties taste incredibly good with cranberries and coarse mustard. Good luck.
