This is a "lick the plate clean" sauce that makes the game dinner perfect!
Ingredients
- 2 tbsp brown sugar
- 2 tbsp red wine vinegar
- 3 pcs shallots
- 8 pcs raspberry
- 5 pcs juniper
- 3 dl game broth
- 0,5 can sour cream
- 2 dl whipping cream
- salt and pepper
Now is the season for game and the sauce is important for the meal to be successful. This game sauce goes perfectly with venison. It has a combination of the classic flavors that a game sauce has, but also has a touch of raspberry and acid.
Step 1
Start by finding a medium-sized saucepan, set on medium heat and add the brown sugar.
Step 2
Wait until the sugar melts and add the red wine vinegar. Now fry well in the pan. Let the red wine vinegar dissolve the sugar.
Step 3
Add raspberries and mash a little with a whisk. Now add the shallots. Let boil for a few minutes before adding the game broth. Add juniper berries and a little fresh thyme.
Step 4
Add the game broth and reduce to half.
Step 5
Add cream and sour cream. Boil for 10 minutes and season with salt. Before serving, use the hand mixer or a blender again to get a completely smooth sauce. Leave to simmer until serving. This is my favorite game sauce!
