Neapolitan Pizza Sauce - Perhaps the World's Best Tomato Sauce!
The search for the perfect pizza.
Ingredients
- 3 glass San Marzano tomatoes
- 2 cloves garlic
- 1 handful fresh rosemary
- 1 handful fresh oregano
- 1 tsp sugar
- 0,5 tsp citric acid (powder)
- 1 pinch maldon salt
I love Pizza and lately I have been testing a lot to make the perfect Neapolitan Pizza. The sauce is extremely important on Neapolitan pizza and it should be made from the best tomatoes, be fresh, mild and have the right consistency. I have now found a method that gives the best result. I look forward to sharing this recipe and method with you. The recipe is best suited for those who are above average fond of making pizza and what I am looking for are perfection.
Step 1
The ingredients are extremely important when making this sauce. San Marzano tomatoes will be used here. Unfortunately, these are a bit expensive, but the taste is absolutely fantastic.

Step 2
Start by pouring the tomatoes and liquid around in a bowl. Run lightly with a hand mixer.

Step 3
The sauce is now too runny to the perfect consistency. That's why I use a strainer. Press the tomatoes through the strainer so that the tomato flesh remains in the strainer and the sauce ends up in a saucepan.

Step 4
Add all the ingredients to the liquid tomato sauce. Boil the sauce until it is 1/3 left. Then 2/3 of the liquid will boil away, and the taste concentrates, and the sauce thickens.

Step 5
Strain the sauce again with the meat. The herbs and garlic cloves remain in the strainer, but have reached and give off a small taste of Italian herbs and garlic.
Step 6
Mix the reduced strained sauce together with the fresh tomato flesh. Now the sauce is ready to use. Store in a refrigerator with plastic wrap or in a box with a lid. This is perhaps the world's best tomato sauce for pizza. Good luck !
