This is a very popular creamy cheese sauce from Italy. It goes well with pasta. Preferably in combination with something a little salty such as bacon, pancetta or ham. I use this sauce for Pizza Bianca (White pizza) and it is incredibly good.
Ingredients
- 2 tbsp butter
- 1 hel garlic
- 1 tbsp wheat flour
- 2 dl cream
- 2 tbsp creme fraiche
- 100 gram parmesan
- salt and pepper
- a few drops of good olive oil
The sauce is very easy to make and contains a lot of calories. Rumor has it that Alfredo who made this sauce had to find a good sauce that would make his sick wife get enough calories. The sauce was served at their restaurant and it quickly became popular with their guests. I do not know if this story is true, but this is an incredibly good pasta and pizza sauce.
Step 1
Start by baking a whole garlic in the oven for about 1 hour and let it cool down. Squeeze the garlic. We are going to use the baked garlic in this sauce.
Step 2
Find a frying pan and add the butter and the baked garlic. Stir well and add the flour. Then add cream and sour cream. When you have a smooth mass, add parmesan and season with pepper, salt and a few drops of olive oil.
