Norwegian Beef stew- with pork knuckles and smoked meat sausages

The broth of pork knuckle makes this dish magical!

  • 1 pcs onion
  • 1 pcs shallots
  • 2 cloves garlic
  • 2 pcs bay leaf
  • 1 tbsp coriander seeds
  • 1 tbsp whole pepper
  • 1,5 liter water

  • 1,5 kg lightly salted Pork Knuckle
  • 4 pcs smoked meat sausage
  • 4 pcs boiled potatoes
  • 4 pcs carrot
  • 1 pcs parsley root
  • 1 pcs celery root
  • 3 tbsp butter
  • 3 tbsp wheat flour

I love good traditional Norwegian food. On slightly cold autumn and winter days, it is incredibly good with a steaming hot stew and flatbread with good butter. I have received a lot of feedback before on whether this is a thick soup or stew. I use thickening in the sauce and then I call it a stew. I like better that there is a bit of chewing consistency left on the vegetables instead of them cooking "to death" and being thickened to the sauce. Whatever method you like best, this is a very good recipe.

Step 1

Start by finding a large pan with a lid. I love my pressure cooker and use it as often as I can. When you use a pressure cooker, you reduce the cooking time by about 70% and the taste of the broth becomes even more intense. The recipe also works very well with a regular pan. Add the ingredient to the broth and add the pork bone. It is IMPORTANT to buy lightly salted and not salted pork bones. If not, the broth becomes too salty. Pour on water and bring to a boil. Let cook for about 2 hours until the meat detaches easily from the bone.

Pick up the meat from the water when it is ready and place in a bowl so that it cools down a bit.

Step 3

Strain the broth so the spices and onions are gone and you are left with a very good broth. Cut all the vegetables into cubes and cook them until tender. This takes about 15-20 minutes.

Step 4

Remove the fat and bone from the pork knuckle and cut the meat into suitable small pieces to eat with a spoon.

Step 5

Fry the smoked meat sausages in a pan (the one you want to serve the dish in) until they get a golden and nice crust. Sprinkle over the flour stir and pour over the broth with the vegetables.

Step 6

Let simmer for 10 minutes and season with salt and pepper. Serve with finely chopped parsley, flatbread and good butter. Good luck.
