Step 1

Start by rinsing the padron in cold water and letting it dry on some kitchen paper. Put all the ingredients for the cheese filling in a bowl and mix well. Make an incision under the stem and one lengthwise on each padron. Remove some of the seeds and fill with the cheese filling. Try to close them again and put in the freezer for 15 minutes. Lightly whisk together the eggs and place in a bowl. Also pour flour and panko / bread crumbs into separate bowls.

Step 2

Dip each padron in flour, then eggs and finish with panko / breadcrumbs. Place on a rack. Once you have breaded them all, put them back in the freezer for at least 15 minutes. Fry in plenty of oil or fry at about 170 degrees for 3-5 minutes. They are ready when they have a golden outside and the cheese filling in the middle is melted. Serve steaming hot with sour cream dressing or another dip you like.
