Pan-fried trout with sour cream sauce and cucumber salad - A Norwegian classic

Norwegian cucumber salad

  • 4 tbsp water
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 pcs cucumber

Sour cream sauce

  • the frying fat from the pan
  • 1 dl milk
  • 3 dl sour cream
  • 2 tbsp finely chopped chives
  • salt and pepper
  • 800 gram trout
  • 16 pcs small potatoes
  • 1 dl wheat flour
  • salt and pepper
  • real butter for frying
Ingredients

Fried trout with sour cream sauce is a classic and it is very good! This is a dinner that is very quick to make. Here you get my best tips and recipe for making this dish as good as possible.

Start by making the classic cucumber salad. Mix together vinegar, water, salt and sugar in a bowl to stir until the sugar is dissolved.

Cut the cucumber into thin slices. Use either a mandolin, a cheese grater or a knife.

Step 3

Mix well and put in the fridge until serving. It should stand for at least 15 minutes. Taste with a little more vinegar if you want it more sour.

Put the potatoes so they simmer. I think it is best to use small potatoes so you do not have to peel them. I wash them well under water before I put them in the pan. Let cook for 10-20 minutes until the potatoes are tender.

Find a plate and sprinkle on some flour. My wife does not tolerate wheat flour so well so I used spelt flour and it also works very well. Mix well with salt and pepper in the flour and roll the fish around in the flour before frying.

Fry the fish on medium + heat in well with butter. The butter should turn brown, but not burn. Always start by frying the skin side if the fish has skin on. When frying fish, it is important that it is not fried for too long. Bake for about 2 minutes on the skin side. Turn down the heat and fry a little on all edges of the fish piece. Bake for about 2 minutes to let rest for a few minutes.

Place the fish on a tray while you make the quick sour cream sauce. You should use the frying fat from the pan to make the sauce.

Pour some milk into the pan and stir well. Since there was some flour on the fish, this also acts as a thickener to the sauce. Turn down the heat on the frying pan and add the sour cream. Stir well and season with salt and pepper. Finish by sprinkling some fresh chives.

Now the dish is ready to serve. Place on a large platter or serve some plates a little nicely. This is a very good dinner for both young and old.
