The 3-2-1 method ensures perfect spare ribs every time!
BBQ is about low and slow. Low temperature over a long period of time. Layer upon layer of good flavors and very tender meat.
Ingredients
Spare ribs.
- 2 pakker Spare ribs natural
- 2 tbsp sweet mustard
- 8 tbsp spare rib spice mix
- 2 dl BBQ sauce
Spare rib spice mix large portion
- 0,5 dl onion powder
- 0,5 dl garlic powder
- 0,5 dl salt
- 0,5 dl coriander
- 0,5 dl cummin
- 0,5 dl chiliflakes
- 0,5 dl sugar
- 1 tsp celery salt
Homemade BBQ sauce
- 4 dl coca cola
- 4 dl ketchup
- 2 dl mustard
- 0,5 dl worcester sauce
- 0,5 dl apple cider vinegar
- 0,5 dl soy sauce
- 2 dl fresh brown sugar
- 50 gram butter
- 2 tbsp spare rib spice mix
Spareribs are one of the most famous BBQ dishes. The 3-2-1 method is a popular method for achieving the best possible result in competitions. 3-2-1 means 3 hours with spice mixture, 2 hours in foil and 1 hour with BBQ sauce. Usually I had to go to the butcher to get raw natural spare ribs, so I was very happy when I saw that Grill Perfect had come with spare spare ribs natural. They were large and fine pieces and you get the opportunity to add the taste yourself.
Step 1
Start by making BBQ sauce and spice mixture. You can buy ready-made spice mixes and BBQ sauce, but it tastes much better if you make it yourself.
Step 2
Start by laying the spare ribs on a clean bench and remove the membrane that is on the back. The easiest way to do this is to carefully cut a knife over one of the legs and use some paper towels to pull off this film. Trim away excess fat and any slinters.
Step 3
Grease the spare ribs with a thin layer of mustard. This gives good taste and adherence to the spice mixture. Sprinkle with plenty of Spice Mixture and make sure the entire spare ribs are covered in spices.
Step 4
Transfer the spare ribs to a dish and let rest for 30 minutes until the grill is hot. Here the key is low and slow. Make sure that the temperature does not get too high. The perfect temperature is 105 degrees. Transfer the meat to the grill on indirect heat. Close the lid and wait for 3 hours. Watch the temperature. This is the first part of the treatment in the 3-2-1 method.
Step 5
After 3 hours of treatment, the spare ribs should now be wrapped tightly in aluminum foil and grill at the same temperature for another 2 hours. This creates steam inside the package and gives very juicy and tender ribs.
Step 6
Now only the last part of the process remains. Now we will brush the ribs with the delicious BBQ sauce. Brush the meat evenly and on both sides. Put back on the grill for the last time of grilling. The last time varies from 30 minutes to 1 hour depending on how thick the spare ribs are.
Step 7
Serve steaming hot with even more BBQ sauce and other accessories you like. This is a real treat dish, but remember to present well with napkins because this is a bit messy to eat. See video instruction for additional guidance.
