Pickled beets - Incredibly good, healthy and suitable for a lot!
By pickling beets, you can store them in the fridge for months!
Ingredients
- 1 kg beets
- 3 tsp caraway
- seasoned jam pickle
Seasoned jam pickle
- 4 dl 7% vinegar
- 4 dl water
- 5 dl sugar
- 1 tbsp whole black pepper
- 5 pcs clove
- 2 pcs star anise
Step 1
Start by scrubbing the beets under cold water. Beets are best when you cook them with the peel on. I had to split one as it was almost twice as big as the others. This is so that they will cook evenly. Put the beets in a saucepan and fill with water so that it just covers the beets. Add 2 teaspoons of salt. Let cook for between 30-45 minutes, depending on the size.
Step 2
Make the jam pickle ready! Pour vinegar, sugar, water and spices into a saucepan and bring to a boil. Pour into a pan to cool until the beets are ready. By adding the spices now, the taste is enhanced.
Step 3
When the beets are cooked, I pour them into a bowl of cold water to stop the cooking process and it makes the job easier to peel them. I use plastic gloves and peel them under water. This means that there will be far less mess.
Step 4
Cut the beets into thick strips. Layer beets and a little caraway in the jam jar. It is important that the glass you use when you pickle is completely clean.
Step 5
Pour over the jam pickle.
Step 6
Pickled beets stay in the fridge for months, but are already ready to eat after 2 days. Perfect in dishes, with different Christmas foods or just on a slice of bread with good liver pate. Pickling is easy and something everyone can do, so here it is just a matter of trying. Homemade is always the best! Good luck.
