Pizza pie "Knockout Pie" - Spicy pie with chicken, onions and jalapenos
A pizza pie full of flavor and lots of cheese!!
Ingredients
Pizza base + lid
- 750 gram wheat flour
- 4,5 dl lukewarm water
- 3 tbsp olive oil
- 1,5 tsp sugar
- 1,5 tsp salt
- 1 pack dry yeast
Cheese
- 450 gram grated Jarlsberg
Knockout Pie Filling
- 400 gram chicken thighs
- 1 pcs onion
- 150 gram pickled jalapeno
- 1 pcs Chinese garlic
- 1 tbsp oregano
- 1 tbsp sugar
- 1 tbsp apple cider vinegar
- 2 tsp salt
- 1 tbsp tomato paste
- 2 dl water
- 1 tsp fennel seeds
- salt and pepper
- oil for frying
Loved this pie from Peppes but they aren't as good anymore!! Now you can make this at home. Many people probably remember Knockout Pie and then it disappeared for a few years. I was happy when it came back, but unfortunately they couldn't make it like before. That's why I've tested and tried my hand a bit and now you can make one that's similar, but tastes even better yourself. I recommend watching the video of how I make this pie a little further down in the recipe.
Step 1
Start by making the pizza dough. I use the same recipe as for my family pizza, so I'll add a link to the explanation here. Family pizza - One of my best food memories from childhood.
Step 2
To make the filling, I start by cutting chicken thighs into small strips and season with plenty of salt and pepper. Find a pot or pan and put on high heat. Fry the chicken on a high heat so that it gets a little crust, but it does not need to be cooked through.
Step 3
Cut up the onion, jalapenos and garlic. When the chicken is ready, I lift it into a bowl. In the same pan, I now fry the onion, jalapeno and garlic for a few minutes. Add the spices and apple cider vinegar. When the vinegar has boiled for 1 minute, I add the tomato paste and the water. Cook for 3 minutes and return the chicken. Simmer for 5-10 minutes until the liquid starts to evaporate. Taste for the sauce.
Step 4
Use 2/3 of the dough for the base and the rest for the lid. Roll out the base into a flat circle that is slightly larger than the pie tin. Grease the pie tin well and place the base in the tin. Roll out the lid to slightly larger than the pie tin.
Step 5
Now layer the filling and grated cheese in the pie tin. Start with 1/3 of the cheese and then add half of the filling. Then add another 1/3 of the cheese and the rest of the filling. Finish with the last 1/3 of the cheese. Now grease the edge of the dough with a little water and place the lid on top. Press well together and over the edge so that excess dough disappears. Use a knife and poke many holes in the lid before it is to be fried.
Step 6
I baked this on the roasting function with top and bottom heat + hot air for 45 minutes at 180 degrees. It is important that a pie rests for at least 10 minutes before you cut it.
Step 7
