Before the dish goes into the oven
- 900 gram pork neck
- 3 pcs celeriac
- 1 pcs onion
- 4 cloves garlic
- 5 pcs sage leaves
- 1 tbsp wheat flour
- 5 dl apple cider
- 3 dl whipped cream
- 800 gram small potatoes
- 2 tbsp butter
- 1 tbsp neutral oil
- 1 tsp chili flakes
- 2 tsp dried thyme
- salt and pepper
After the dish has been in the oven
- 2 tbsp butter
- 1 tbsp dijon mustard
- 1 tbsp calvados / cognac / brandy
- 2 tbsp finely chopped parsley
- 2 pcs apples in small cubes
