Pork á la Normandie - French stew with pork and apples!

Before the dish goes into the oven

  • 900 gram pork neck
  • 3 pcs celeriac
  • 1 pcs onion
  • 4 cloves garlic
  • 5 pcs sage leaves
  • 1 tbsp wheat flour
  • 5 dl apple cider
  • 3 dl whipped cream
  • 800 gram small potatoes
  • 2 tbsp butter
  • 1 tbsp neutral oil
  • 1 tsp chili flakes
  • 2 tsp dried thyme
  • salt and pepper

After the dish has been in the oven

  • 2 tbsp butter
  • 1 tbsp dijon mustard
  • 1 tbsp calvados / cognac / brandy
  • 2 tbsp finely chopped parsley
  • 2 pcs apples in small cubes
