Port wine sauce is very good and has a lot of taste and sweetness from the port wine. Therefore, it goes very well with duck or light meat. The recipe also has video instructions further down in the recipe.
Ingredients
- 2 pcs carrot
- 2 pcs shallots
- 2 cloves garlic
- 2 tsp whole black pepper
- 1 handful fresh thyme
- 3,5 dl port wine
- 3 dl broth (duck / chicken / turkey)
- 1 tsp honey
- 2 tbsp butter
- a little salt
Step 1
Start by finding a pan and fairly high heat. Cut up the vegetables. Put some butter in the pan and melt the butter. Add onion, garlic and carrot and cook for a few minutes. Cook until the vegetables have a little crust, this gives a good taste to the sauce. Add the herbs and whole black pepper. Pour in the port wine and stir well.
Step 2
Let the port wine boil until it is almost completely gone. A maximum of 1/3 of the liquid should be left.
Step 3
Now add the broth. If I make the sauce for duck then I use duck broth, if I make turkey I use broth from turkey. Beef broth for beef etc ... Mix well and let the sauce reduce down to only 1/3 once more. Find a strainer and strain the sauce into a clean saucepan.
Step 4
Turn down the heat and whip in a few pieces of butter just before serving. Taste with a little more salt if necessary. Now the sauce is ready to be enjoyed.
