Ratatouille baked in the oven - These delicious vegetables go with most things!
Delicious vegetables with lots of flavor!
Ingredients
- 1 pcs onion
- 6 cloves garlic
- 1 tbsp olive oil
- 1 pcs eggplant
- 1 pcs squash
- 2 pcs tomatoes
- 1 pcs red chili
- 1 pcs green paprika
- 1 pcs red paprika
- 2 tsp red wine vinegar
- 1 tsp sugar
- 1 tsp salt
- 2 tsp oregano
- 50 gram parmesan
Ratatouille became most famous from the movie of the same name, but is a well-known side dish. I have previously posted a recipe for a more classic recipe, but this one is simpler and I think the taste is even better! It is very easy to make and a perfect accessory that you can use for most things.
Step 1
Start by finding a pot/pan that can stand in the oven. Here I use my cast iron pan which fits perfectly. Add half of the olive oil to the pan. Coarsely chop onion and garlic. Fry in the pan together with oregano. When the onion has softened, I add red wine vinegar. Cut the aubergine into cubes and add to the pan. Mix together and put the whole pan in a preheated oven at 200 degrees fan. Leave to cook for 30 minutes.
Step 2
Use an immersion blender or mash this into a thick paste. This will now be the sauce for this Ratatouille. Add coarsely chopped pieces of squash and paprika. Sprinkle over Parmesan and the rest of the olive oil. Add some salt and freshly ground pepper and return to the oven. Now this will have another 20 minutes in the oven. Stir 1-2 times during the last cooking time.
Step 3
Now this accessory is ready! Stir well and finish with some fresh herbs and a little extra olive oil. Good luck.
