Asian Salmon Casserole - Quick and easy dinner that tastes great!

Everything is made in the same pot! Maximum with taste and minimum with dishes.

  • 600 gram Frøya Midloin
  • 8 pcs asparagus
  • 2 pcs sweet potato
  • 1 pcs squash
  • 3 tbsp red curry
  • 5 dl coconut milk
  • 0,5 pcs lemon (juice only)
  • 1 tsp sugar
  • 1 tsp maldon salt
  • some fresh coriander
Ingredients

I like quick dinners made in the same pot. In this recipe you get lots of flavor, delicious salmon and good vegetables. In addition, you get minimal dishes as the whole dinner is made in the same pan / pot. You can buy red curry at all stores and together with coconut milk you get a wonderful sauce that is popular for everyone. Check out this delicious Salmon Dinner. Find all the ingredients and a pot or pan with a high edge.

I start by turning the pan on medium + heat and add a little neutral oil and red curry paste. You can buy this at all grocery stores! To enhance the flavors, fry the curry paste for a few minutes while cutting up the sweet potato and squash into cubes. Add this to the pan and cook for a few minutes.

Add coconut milk and bring to the boil. Let the potatoes and squash cook for about 15 minutes until the potatoes begin to tenderize. Taste the sauce with a little sugar, salt and lime juice. If you like a slightly stronger dish, you can add a little chili powder or chili sauce as well. Red curry has different strengths from the different producers so it is important to taste it to find a nice balance.

Step 4

Cut Frøya midloin into portion sizes and cut up asparagus. Start by putting the asparagus in the pan and stir once so they are covered in sauce. Now add the salmon and make sure they are slightly covered with sauce. The salmon should just be fried in the middle then it will be more juicy. Therefore, 5 minutes is plenty, when you use sushi quality salmon such as Frøya salmon.

Finish with some fresh coriander. It's also nice to finish with some "stripes" of coconut milk for garnish. Now you can enjoy a wonderful salmon dinner made in a short time without worrying about the dishes. Good luck.
