Learn how to make a delicious risotto!
Ingredients
- 350 gram risotto rice
- 1 liter broth (chicken / vegetable)
- 4 pcs shallots
- 4 cloves garlic
- 2 dl white wine
- 1 tbsp olive oil
- 100 gram parmesan
- 30 gram butter
- 6 pcs aroma mushrooms
- 100 gram dried stone mushrooms
- salt and pepper
- fresh herbs
Risotto is not difficult once you have learned a few little tricks. In this recipe I will show you how to make a delicious risotto at home. You can of course use the same method on other types of risotto. The recipe also has an instructional video. If I am asked which dish is my favorite vegetarian dish, the answer is always the same: Mushroom risotto.
Step 1
When I make risotto, I always make sure to have everything in the risotto cut / grated and ready. Start by cutting onions / shallots and garlic and find a pan to make risotto and one to heat the broth.
Step 2
Start by adding a little olive oil to the pan together with the onion and fry until shiny. Add the rice and cook for 1 minute before pouring in white wine. Let the liquid of the wine boil almost completely before you start diluting with hot broth. From the time you add liquid to a risotto, it takes about 19-20 minutes before it is done.
Step 3
Fry the mushrooms in a separate pan and place the dried stone mushrooms in lukewarm water. They should lie there for 10-15 minutes. Use some of the "water" from the stone mushroom as a broth in the risotto. I use chicken broth, but you can of course use vegetable broth or mushroom broth for a pure vegetarian dish.
Step 4
Dilute with broth regularly and stir frequently when making a risotto. It is important that there is a little extra broth left in the frying pans when it is approaching 19 minutes. Taste the rice grains that they have perfect chewing resistance. There should be some chewing resistance, but not "get stuck in the teeth". When the rice is perfect, turn off the heat completely and add the mushrooms, grated parmesan and butter. Mix together and season with salt and pepper.
Step 5
Serve risotto piping hot! Feel free to decorate with some fresh herbs. I recommend you watch this instructional video before you begin. Good luck.
