Roast beef salad - Nutritious dinner in less than 20 minutes.
Sometimes a quick and nutritious dinner is perfect!
Ingredients
Roast beef salad
- 2 pakker Roast beef
- 10 pcs potatoes
- 12 pcs small tomatoes
- 4 tbsp chopped pickles
- 100 gram ruccola salad
- 0,3 pcs fresh chili
- 0,5 pcs red onion
- the dressing (see recipe below)
- a little salt on top
Dressing
- 1 tbsp good olive oil
- 2 tsp balsamic
- 1 tsp dijon mustard
- a little freshly ground pepper
I am very fond of Roastbeef as a spread, but lately I have used it more often also for dinner. It's an easy way to get nutritious meat that is tender and already ready. Together with potatoes, vegetables and a little salad, this will be a very good dinner. The dressing for this dish is very good! Also works very well for tour food and packed lunches.
Step 1
Start by slicing the potatoes. This means that the potatoes cook faster and they are completely cut when you eat afterwards. Cook for 10-15 minutes until the potatoes are done.
Step 2
When the potatoes are boiling, you have a good time to finish the rest of the dish. Cut onions, lettuce, pickles and tomatoes. Grate the roast beef into suitably large pieces.
Step 3
Mix together good olive oil, balsamic vinegar and Dijon mustard. Feel free to add a little freshly ground pepper to the dressing.
Step 4
When the potatoes are ready, pour off the boiling water and add all the other vegetables to the pan. Pour over the dressing and mix well.
Step 5
Put some ruccola salad in the bottom of the plate or bowl and pour over the good potato mix. Sprinkle with lots of good roast beef and finish with a little fresh chili, a few drops of good olive oil and a little salt. Now the dish is ready to be enjoyed. A quick, nutritious and good dinner.
