Roast chicken - This method gives the best result!

The quality of the chicken and method is the key to a great result every time.

The quality of chicken is crucial to the result when you make roast chicken. Today I have tested the new SMAK series from COOP and here you get chicken of very good quality. The chicken has grown up more slowly than usual and received better nutrition. The result is a chicken with more fat on the body and better consistency. The method I use is called Reverse searing. It really means that you start on low heat for a long time and end with a very high temperature. This method is excellent for chicken and gives juicy meat and very crispy skin.

Step 1

Start by finding a pan and add some vegetables. This is to give a good broth and moisture to the chicken. It also means that the chicken is lifted slightly from the pan and the heat can more easily reach all places on the chicken. Put some butter in the pan and pour on 5 dl of water. Grease the chicken with olive oil and sprinkle with plenty of salt and pepper.

Step 2

Tie the thighs together with a food twine and place the chicken in the pan. Set the oven to 90 degrees hot air and insert the chicken. Check the temperature of the thighs and breasts of the chicken with a thermostat during frying. You want a temperature of 65 degrees. At 90 degrees it takes about 2-3 hours to reach this temperature.

Step 3

When the chicken has reached the right temperature, I take the chicken out of the oven and set the maximum grill power and heat. I make small holes in the skin with a sharp needle. This gives extra crispy surface. I used a 270 degree hot air grill. Lay on the side and let the thigh on one side grill first. Turn and fry the other thigh until it has a nice color. Now return to starting position and grill until golden and fine.

Let the chicken rest for 15 minutes before cutting into it. Here served with spice rice and a chicken sauce. The method gives very juicy chicken and completely crispy skin. Chicken is popular for everyone!
