Gourmet salmon in a package

  • 400 gram Frøya Midloin
  • 8 pcs asparagus
  • 2 pcs potatoes
  • 3 pcs spring onion
  • 0,5 pcs squash
  • 1 tbsp sesame seeds
  • a little fresh dill

Browned soy butter

  • 50 gram dairy butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp siracha (chili sauce)
  • 0,5 pcs lime (juice only)
Ingredients

For me the lunch break is an important part of a trip. Try this delicious gourmet salmon with accessories next time you go on a trip. Delicious vegetables, fresh salmon and a wonderful sauce gathered in one package. Put it on the grill or fire pan and the food is ready in a few minutes. I have also made a video to show the whole process which is further down in the recipe.

Step 1

I start by making the sauce. Start by browning the butter in a saucepan. Make sure that the butter is not burnt. It should get a golden color and give a nutty smell. The easiest temperature to do this at is a little above average. Pour the rest of the ingredients into a bowl and mix together. Let the butter cool down a little and pour in a little and a little of the butter.

Step 2

Cut up all the vegetables. On the potatoes I use a mandolin or cheese grater to make them very thin. Add double aluminum foil and add a little olive oil. Add the vegetables and pour on some of the sauce. Place the salmon on top of the vegetables and pour over a little more sauce. Finish by sprinkling some sesame seeds.

Step 3

Pack well. When you are going to take this on a trip, I usually put it in a small plastic bag as well. Put on a grill and feel free to put on a lid if you have one. Depending on the heat, this takes between 5-8 minutes. It is best when the salmon is pretty and pink in the middle. Here you can watch a movie about how I cook the whole dish.
