Salmon tartare - salmon with incredibly good flavors!

A delicious appetizer that is easy to make!

Salmon tartare

  • 400 gram Frøya Salmon
  • 4 tbsp finely chopped shallots
  • 2 tbsp finely chopped chives
  • 1 tbsp extra virgin olive oil
  • 1 tsp maldon salt
  • 1 tbsp lemon juice
  • lemon pepper
  • Røros sour cream with horseradish
  • mustard sauce
  • dill

Cured salmon

  • 120 gram salt
  • 80 gram sugar

Røros sour cream with horseradish

  • 2 dl Røros sour cream
  • 4 tsp horseradish puree

Mustard sauce

  • 4 tbsp Mustard dressing
Ingredients

This is an appetizer I have made in several versions. I have now found the perfect method that gives a good taste and consistency. Here, salmon is combined with good flavors from homemade mustard dressing, dill and Røros sour cream with horseradish. This is a temperate dish and is therefore smart if you are going to have company and want to serve a good appetizer, but do not stress so much right before serving.

Step 1

Start by cutting the salmon into fine cubes with a sharp knife.

Step 2

Measure out 60% salt and 40% sugar. Here the amount does not count so much, but it is the ratio between salt and sugar that is important. You can also add a little flavor from aquavit / cognac or gin, but since it is marinated so quickly, the flavors do not have time to settle completely. Find a clean pan and pour some of the mixture into the bottom. Put on the salmon and sprinkle the rest over. Cover with plastic wrap and leave on the bench for 1 hour.

Step 3

Use a strainer and rinse the fish well so all the sugar and salt is gone. I use cold water when rinsing. Place the fish on paper towels (intended for food) and dry the fish well. Pour the fish into a bowl and add the lemon pepper, olive oil, lemon juice, shallots and chives. Mix well. A good tip here is to use good quality extra virgin olive oil.

Step 4

Røros sour cream with horseradish. I add about 5 teaspoons horseradish puree per 3 dl sour cream. Sour cream also works very well, but stay away from light cream for this dish. Mix together and taste so you get just the perfect strength of horseradish.

Mustard dressing is incredibly good and easy to make. Here I show you my recipe for this sauce. Mustard Sauce - Homemade is always the best!

Now it comes to the serving of the tartar. I start by putting on a good tablespoon of mustard dressing in the middle of the plate. Use the back of the spoon and distribute the mustard to a rounding. Visually, it is important that the rounding with the mustard is larger than the pan you are going to put the tartar in. Sprinkle some chives on the mustard.

Step 7

Put a pan in the middle of the plate and add about 100 grams of salmon per person. Gently press down and remove the pan.

Step 8

Finish with a little lemon pepper on top, garnish with a little dill and add a crispy biscuit and a spoonful of sour cream with horseradish. Now this dish is ready for serving. This is the best salmon tartare I have ever tasted! Good luck.
