Satay sauce / peanut sauce - Perfect for dipping grilled meat
It is not without reason that Satay chicken with peanut sauce is one of the most popular "streetfood" dishes. This tastes fantastic and much thanks to a good Satay sauce.
Ingredients
- 1 can coconut milk
- 3 tbsp red curry
- 1 tbsp chili sauce
- 4 pcs shallots
- 4 cloves garlic
- 3 tbsp neutral oil or coconut oil
- 2 tbsp palm sugar or brown sugar
- 1 tsp maldon salt
- 1 tbsp fish sauce
- 3 tbsp tamarind sauce
- 250 gram roasted peanuts
I have checked countless recipes and procedures and found one I think will be perfect. The sauce has consistency, a lot of flavor and is both strong and sweet. Make a large portion so you can save a little for next time. Once you get the taste of satay sauce, it's easy to get a little addicted. When you dip grilled satay chicken in this dip, it's hard not to smile and take some more.
Step 1
Start by roasting peanuts in the oven at 230 degrees until they turn brown in color. This takes 10-15 minutes. Let the roasted peanuts cool down and beat them into flour / pieces in a blender. Pour the oil into the pan and heat up. Add the finely chopped onion and cook until it gets a golden and slightly brown color. Add finely chopped garlic and cook for a few minutes. It is important that the garlic is not burnt. Add the red curry and chili sauce. Bake for a few minutes until the mixture cracks. When it cracks, you see that the oil differs from the mixture in the pan. When the sauce cracks, add the coconut milk. Bring the mixture to a boil and turn down the heat to medium. Now let the sauce simmer a little. Pour in tamarind sauce, fish sauce and palm sugar. Pour in the roasted peanuts, but save a little to sprinkle over the sauce at the end. Taste the sauce so it gets a nice balance. The sauce should be both strong and sweet and have a rich and good taste. Serve the sauce with satay chicken or as an accompaniment to other grilled meats.
