Scampi with green curry - Spicy and lots of good taste!
Fresh and strong flavors with juicy scampi!
Ingredients
- 8 tbsp green curry
- 500 ml coconut milk
- 40 pcs raw scampi without shell
- 2 pcs spring onion
- 1 pcs green chili
- 1 handful fresh coriander
- lime juice
- salt
Step 1
Start by adding scampi along with some of the green curry. If you have time, feel free to marinate the scampi in the fridge overnight in this marinade. Minimum 30 minutes.

Step 2
Find a frying pan or saucepan and add a little neutral oil and the green curry. You can buy ready-made green curry, but it is also very easy to make it yourself. Here is a link to my "Norwegianized" recipe for green curry. Grønn curry - Perfekt utgangspunkt for mange gode middager. Fry the curry on medium heat until it begins to separate. This takes about 5-10 minutes. Stir regularly so that it does not burn in the pan.

Step 3
Mix in the coconut milk and cook for a few minutes. Season with salt and lime juice.

Step 4
Fry the scampi quickly on a grill pan or in a frying pan. Scampi are fried very fast! Bake for 30-60 seconds on each side until you see the scampi have turned white and not shiny.

Step 5
Add the scampi to the sauce and finely chop the spring onion and green chili. Sprinkle chili and spring onion over the dish and preferably some fresh coriander. Serve with rice and preferably some good bread. Can be nicely combined with other exciting dishes on a "tapas table". Good luck.
