Simple and good everyday dinner in less than 20 minutes - Oriental Casserole
This is a dinner I make in several different varieties. Lots of delicious flavors, healthy and easy.
Ingredients
- 4 pcs chicken fillet
- 3 pcs carrots
- 0,5 pcs squash
- 2 pcs chili
- 2 cloves garlic
- 1 pcs small ginger
- 6 dl chicken broth
- 1 pcs lime
- coriander
- red curry (on glass)
Something I always have is some glasses of curry paste. You can buy this at all grocery stores, but you get the best in the immigrant stores. This time I have used red curry and sour cream. That was what I had in the fridge, but it is also perfect to replace sour cream with coconut milk. You can even vary how strong the dish should be with chili, but I like the food quite spicy!
Step 1
Start by putting on the pan of rice. Follow the instructions on the package. Making rice takes about 20 minutes. Find a pan and set on high heat. Cut the chicken into fine strips and add to the pan along with a little oil.
Step 2
Cook until the chicken starts to finish before adding the garlic, chili and ginger. Bake for a few minutes before adding the box of curry paste.
Step 3
Fry and stir for a few minutes before adding the chicken broth, carrots and squash. Let cook for a few minutes before adding the sour cream. Squeeze in the juice of 1 lime and season with salt and pepper.
Step 4
Now let the pan cook for 5 minutes or until the rice is done and the dinner is ready to serve. Decorate with fresh coriander. Good luck.
