Summery chicken stew - "All in one pan" with the sweet potato
This is a delicious and tasty chicken stew.
Ingredients
- 1 pcs chicken
- 3 pcs sweet potato
- 3 pcs carrots
- 1 pcs yellow onion
- 1 pcs red onion
- 2 tbsp brown sugar
- 2 pcs red chili
- 1 pcs ginger
- 2 pcs whole china garlic
- 2 bokser coconut milk
- 1 pcs lime
I almost always buy whole chicken. Then you get better quality at a better price and in addition a far better broth than what you can buy. This pan is very practical and can be prepared early in the day or perfectly if you need a pan ready. It has an exotic taste of coconut milk, ginger and chili. When you make the broth yourself, this becomes a wonderfully good everyday dinner.
Step 1

Step 2
Find a pan and add a little neutral oil. Heat until the oil starts to smoke. Divide the chicken and place the carcass in the hot oil.
Step 3
Cook until golden. Add 1 onion, 2 carrots and garlic. Some whole pepper and coriander seeds. Now you need to create a good broth. Cook for a few minutes before pouring on cold water until it covers the chicken.
Step 4
Let simmer for about 1 hour. Pick out the chicken carcass and run the rest smoothly with a hand mixer.
Strain so you get a completely smooth mass.
Step 5
Finely chop ginger, chili, garlic and red onion and place in the pan. Cook until the onion is soft. Add 2 tablespoons of brown butter and stir. Pour in the broth from the chicken. Pour in the coconut milk and bring to the boil. Turn down the heat so that it barely boils.
Step 6
Add the sweet potato, carrot and chicken breasts in small pieces. Let soak for about 30 minutes. Add the lime juice. Season with a little soy, salt and pepper.
Step 7
