Sour Licorice Panna Cotta with Passion Fruit

A simple and delicious dessert.

Ingredients

Panna cotta

  • 5 dl Greek yogurt natural
  • 5 dl whipping cream
  • 100 gram sugar
  • 3 tsp raw licorice powder
  • 4 pcs gelatin plates
  • some white chocolate
  • raspberry dust or gold dust for decoration

Passion fruit sauce

  • 4 pcs Passion fruit
  • 3 tsp sugar

I have made this recipe many times and it tastes great. I think it is good when there is a little acidity in the dessert. So in this recipe I mix Greek yogurt with cream. A little taste of licorice and the sour passion fruit is very suitable for ending a meal with. I decorate the dessert with raspberries, baked white chocolate and preferably some raspberries or gold dust. The beauty of such a dessert is that you can prepare everything early in the day or the day before you have guests visiting. Then there will be little work when you have the guests visiting and you can enjoy the company. I think it's stylish and serves in a cocktail glass.

Step 1

Start by pouring cream into a saucepan and add sugar and licorice powder. Heat the cream mixture to about 80 degrees and let it soak for a few minutes below boiling point.

Step 2

Place the gelatin plates in a bowl of cold water. When the cream mixture is ready, take up the gelatin and squeeze out the water. Pour in the hot cream mixture and stir until dissolved.

Step 3

Add the yoghurt and stir until you have a smooth mass. Find glasses or bowls and pour in the panna cotta batter. Leave for a few minutes before putting it in the fridge.

Step 4

Divide the passion fruit in 2 and scrape out the contents. Run in a blender along with the sugar. Pour over the panna cotta just before serving.

Step 5

Garnish with raspberries and baked white chocolate. To make the chocolate, set the oven at 200 degrees and cover a baking tray with baking paper. Break off a few pieces and fry until the chocolate gets a golden brown color. Cool and the chocolate is ready. This is an exciting and fun variation of a classic dessert. Good luck!
