Spinach soup with coconut milk - Rarely is something so nutritious so good!

I remember very well from childhood that the Skipper ate spinach and became very strong. The truth is that Spinach is extremely healthy, it contains lots of important nutrients for the body.

  • 2 cloves garlic
  • 1 pcs large shallot
  • 6 dl chicken broth
  • 1 can coconut milk
  • 0,5 pcs lemon
  • cayenne pepper or other type of strong chili
  • salt and pepper

It's a little nice when healthy food also tastes good! Spinach soup with coconut milk and chili is a super soup that is easy to make. It goes very well with eggs in this soup and a good source of protein. I am very fond of making soups in the fall and winter. I will definitely make this again during the winter.

Start by finding a large pan. Add a little butter or oil to the pan and cut up the garlic and shallots. Add the onion to the pan and simmer for a few minutes.

Put the spinach in the pan and stir. After a few minutes, a lot of volume disappears from the spinach.

Then it's time to add the chicken broth.

Add the juice of 1/2 lemon and cook for a few minutes before adding the coconut milk. Boil for a few more minutes and run smoothly with a hand mixer or possibly in a blender. Just be careful not to overfill the blender with hot liquid. It can quickly go wrong. Season with salt, pepper and chili.

Boil 1-2 eggs per person and put in cold water. Remove the shell and divide the egg in half. Pour the soup into a soup plate and add eggs.
