Summer dream - A delicious pie filled with vanilla cream and lots of good berries!

This is my favorite cake to serve in the summer!


28 cm pie form

Pie base

  • 250 gram wheat flour
  • 100 gram icing sugar
  • 1 tsp salt
  • 150 gram real butter in cubes
  • 1 pcs egg

Vanilla cream

  • 8 pcs egg yolks
  • 70 gram cornstarch
  • 180 gram sugar
  • 7,5 dl milk
  • 2,5 dl whipping cream
  • 1 pcs vanilla bean


  • 1 kurv raspberry
  • 1 kurv strawberry
  • 1 kurv blueberry
  • a little grated dark chocolate

A delicious crispy pie base filled with homemade vanilla cream and lots of fresh berries! That's how a cake in the summer should be for me. The first time I was served this was with some friends, and after that it has become a favorite here at home.

Step 1

Start with the pie base because it is the one that takes the longest time. Put all the ingredients in a mixer and mix together to a smooth mass.

Step 2

Form as a flat circle and wrap in plastic wrap. Put the bottom in the fridge and let it rest for 1 hour before rolling it out.

Step 3

Roll out the bottom and place in a greased pie tin. Be sure to squeeze well into the corners and try to get it as even as possible. Put the pan with the pie crust back in the refrigerator and turn the oven to 190 degrees hot air. Leave the bottom for 45 minutes before frying.

Step 4

When the bottom is to be baked, prick a few holes in it with a fork and place over baking paper. Fill with dried peas or something else that can withstand heat. This is important for the bottom to keep its nice shape when frying. Bake for 20 minutes in the middle of the oven. Remove the peas and cook for about 5 more minutes. Allow it to cool completely before removing it from the pan. Place the bottom of the cake pan you intend to serve the cake on.

Step 6

Put the cake together just before you serve it so the pie base stays crispy and good. Fill with plenty of vanilla cream and pour over large amounts of berries (remember to wax to clean the berries). Finish by grating some dark chocolate on top and serve. This is a summer dream! Good luck. Here is a video of how I put together the cake (see video below).
