Tarte Tatin - This famous French apple cake tastes fantastic!

Rumor has it that this famous apple cake was first made by mistake at a French hotel in 1889. It immediately became a hit and became their trademark. Tarte Tatin is perhaps the world's most famous apple cake and it is not without reason. It tastes amazing! Delicious apples that bake soft and good in caramel with vanilla. A crispy puff pastry gives consistency. It requires some technique, but I will explain to you thoroughly how to do this.

  • 6 pcs sourish apples
  • 150 gram sugar
  • 50 gram butter
  • 1 pcs vanilla bean
  • 1 dl water
  • 1 pk puff pastry (can use ready-frozen)

Step 1

Start by peeling the apples and dividing them. Feel free to see how in the video below. It's good if everyone is the same size. Cut up the apples and place in a bowl. Find a frying pan that can be put in the oven. Pour in sugar and water. Cook until it becomes a golden and fine caramel. When the sugar has taken on a nice color, turn off the heat and add the butter and seeds to a vanilla bean. Stir and place frying pan on table mat. Place the apple pieces neatly in a circle and make sure that the whole bottom is covered with apples.

Step 2

Find the puff pastry and place between 2 layers of plastic foil. Let rest for a few minutes until it starts to soften. Roll out into a circle that is slightly larger than the frying pan. Lay over and fold the edges in underneath.

Step 3

Since this is to be served the other way, this will be the edge that holds all the good filling in place. Make a few holes with a knife and put it in a preheated oven at 200 degrees hot air. Bake for about 20 minutes until the top has turned golden and crispy. Let rest for 20 minutes and turn on a plate.

Serve with a delicious vanilla ice cream or vanilla cream.
