Sweet potato and Squash in spicy tomato sauce - Healthy accessory that fits most!

I love both sweet potato and squash so that's why I made this dish. When I try to eat a little healthy, I think it's delicious that there is a little taste in the food. This accessory is packed with nutrition, filling and tastes great. The dish is easy to make and goes well with meat, fish and poultry.

  • 2 pcs sweet potatoes
  • 1 pcs squash
  • 1 pcs onion
  • 1 tbsp tomato puree
  • 2 cloves garlic
  • 1 can canned tomatoes
  • chili sauce
  • salt and pepper
  • a little neutral oil

Step 1

Start by cutting the sweet potato into strips and place in a fireproof pan.

Add a little neutral oil and season with salt and pepper. Preheat the oven to 200 degrees and put in the potatoes. They should cook for 20 minutes before adding the rest. So when the potatoes are in the oven, I make the tomato sauce and cut the squash into strips. To make the tomato sauce, start with a saucepan with a little neutral oil.

Step 3

Add finely chopped onion and garlic. Cook until shiny and add chili sauce and tomato paste. Cook for a few more minutes before adding the canned tomatoes. Turn down the heat and simmer for a few minutes. Season with salt, pepper and possibly more chili.

Step 4

Remove the potatoes when they have cooked for 20 minutes.


Sprinkle with squash and pour over the tomato sauce. Mix and put back in the oven for another 20 minutes. Decorate with some fresh herbs just before serving. This is a very good accessory that fits most things!
