Ingredients

This is a Thai BBQ dish that tastes really good. Juicy pork neck cut into thin slices served with lettuce leaves and Thai inspired BBQ dip. There was great ecstasy among visitors when this came to the table.

Step 1

Start by making the marinade for the meat. Find the meat and take it out of the package. Make many small cuts in the meat with a sharp knife. This means that the marinade absorbs better into the meat. Put the meat in a tray and pour on the marinade. Mix well and cover with plastic wrap. Put in the fridge for a minimum of 3 hours, but preferably overnight.

Step 2

Prepare the dip at the same time so that the flavors are well distributed in the dip. Mix all the ingredients and taste so you get a well-balanced dip. This dip is incredibly good and very tasty.

Step 3

Grill the pork neck on direct heat and turn regularly at the beginning until the meat gets a nice crust. Pull the meat to indirect heat and put the lid on the grill. Now the meat should continue to grill for +/- 1 hour until it reaches a core temperature of about 69 degrees. Let the meat rest for 10 minutes before cutting it into thin slices with a sharp knife.

Step 4

Wash, divide and spread lettuce leaves on a large platter. Put the dip in the middle and fill with slices of pork neck around the dip. Finish by sprinkling over some finely chopped spring onions.
