  • 1,3 kg wheat flour
  • 230 gram sugar
  • 3 tsp cardamom
  • 1 pack fresh yeast

  • 200 gram brown sugar
  • 100 gram sugar
  • 2 tbsp cinnamon

It's hard not to look forward to buns when these are in the oven. I dare say that these cinnamon buns are the best I have tasted. When making cinnamon buns, there are some things that are important to get a good result. Raise so they become airy, brown sugar and lots of butter. To get enough butter, I use cold butter and a cheese grater. The result is amazing cinnamon buns. Eat a little less if you can, because cinnamon buns should be juicy and with lots of butter, sugar and cinnamon. This must be perfect to make if you invite someone for coffee during the weekend. Melt butter and add milk. Heat up to about 37 degrees. Mix the fresh yeast into the milk mixture.

Pour all the dry ingredients into a food processor and mix well.

Mix in the liquid and let the dough knead for 10-15 minutes with the kneading hook. Adjust with a little more flour if necessary. The dough should drop the edge and you should have a smooth and fine dough. Take plastic wrap over the bowl and let the dough rise for 40 minutes. At this time, the dough will roughly double in size.

Roll out into a large rectangle. Cut off the edges so you get straight and nice edges.

Use a cheese grater and cut up cold butter. Spread around the whole dough, but leave a strip at the bottom that you do not put on butter.

Add brown sugar and cinnamon and spread evenly over the butter with your hands.

Roll the dough tightly together into a long cylinder. Divide into neat slices of about 1.5-3 cm slices. This determines how big the cinnamon buns will be. Place the slices on a baking tray with baking paper and remember that they must have some distance between them.

Now I use the raising function in the oven. Then the buns are raised perfectly in 30 minutes, if you do not have this option, cover the buns with a towel or plastic and let rise for 45 minutes. Brush with egg before frying.

Step 9

Bake the buns in a preheated oven at 200 degrees. They need between 17-20 minutes. When they have become golden and beautiful, they are ready. Let the bowls rest for a few minutes on the baking tray before moving them onto a rack. Allow to cool slightly before serving. Now you can enjoy the world's best cinnamon buns.
