Breakfast focaccia with spelt flour and oats - a healthy and tasty start to the day!
A focaccia made with spelt, hazelnuts, oats and honey. A very good start to the day!
Ingredients
- 450 gram sifted spelt flour
- 300 gram wholemeal spelt flour
- 80 gram oatmeal
- 80 gram hazelnuts
- 2 tsp salt
- 1 tsp sugar
- 2 tbsp honey
- 2 tbsp creme fraiche
- 1 pack fresh yeast
- 8 dl milk
- 1 tbsp olive oil
- 1 tsp oregano
This recipe was actually for one morning when I wanted to bake something fresh for breakfast, but it was a bit empty in the cupboard. Therefore, it was a mixture of both sifted spelt flour, whole spelt flour, oats, hazelnuts, honey and milk that just went out of date. The result was a wonderfully good Breakfast focaccia! This is very easy to make and the result is an airy and tasty focaccia.
Step 1
Start by running hazelnuts and oatmeal in a blender until it has a floury consistency.
Step 2
Mix together all the dry ingredients in the mixing bowl and add the oats and nut mixtures. Mix a little.
Step 3
Heat milk with creme fraiche and olive oil to about 37 degrees. Take in the fresh yeast and stir well until the yeast is mixed.
Step 4
Use a food processor and mix together the dry and wet ingredients until you get a sticky thick mixture. Take over plastic wrap and let the dough rise for about 30 minutes until it has doubled in size.
Step 5
Find a cake tin with a high edge or long pan and place baking paper in the bottom. Pour on a little olive oil and sprinkle salt on the baking paper. Pour the batter into the pan.
Step 6
Finish with a little more olive oil, sprinkle with salt and a little oregano.
Step 7
Put the focaccia in a preheated oven at 250 degrees hot air. Bake for +/- 23 minutes and remove the focaccia. Take the bread out of the pan and let it rest on a rack for 15 minutes before cutting it up.
Now the breakfast focaccia is ready to serve. I like best to cut into squares that I divide in half and fill with good toppings or eggs. A delicious and healthy start to the day. Although I call it a breakfast focaccia, it is of course just as suitable for lunch. Good luck.
