Break bread with oats - Simple recipe with fantastic results.

I have become more and more fond of baking. There are not many things that give a better start to the day than the smell of yeast baked in the oven. This bread with oats is easy to make and tastes fantastic. The recipe has lots of pictures as an explanation so it will be as easy as possible for you to make this. This is not difficult and the result is to be proud of!

Ingredients

large round pan
  • 600 gram wheat flour
  • 80 gram oatmeal
  • 2 tsp maldon salt
  • 2 tsp sugar
  • 0,5 pk dry yeast
  • 2 dl water
  • 3 dl milk
  • 100 gram butter
  • 1 pcs eggs for brushing

Step 1

Start by mixing all the dry together in the mixing bowl. Let the machine run for a few seconds before adding liquid so that the dry mixes well. Mix together 2 dl steaming hot water and 3 dl cold milk from the fridge. Then the temperature will be in excess of 20 degrees and absolutely perfect. Pour the mixture over the dry while the machine is still running. Leave the dough to knead (use a kneading hook) for about 10 minutes on a slow to medium speed. This allows the gluten in the flour to work properly before adding the butter. Divide 100 grams of butter into cubes.

Add one by one to the mixing bowl and you will see that the dough "eats" up the butter. Let knead for another 5-7 minutes.

If the dough is a little too sticky, adjust with a little more flour. It should be a loose and pliable dough. When it just drops the edge of the mixing bowl, it is perfect.

Turn off the food processor and let the dough rise in the bowl for 1 hour. You get the best raising result if you take plastic wrap over the bowl, a cloth and leave it in a warm place.

Find a pan you want to bake the bread in. I have some round pans of 32 cm with a low edge that I think work very well. You can also use a frying pan or other type of pan. Remember to lubricate the pan with neutral oil. Divide the dough into 18 fairly equal pieces, roll round and place in the pan.

Let there be some distance between the buns.

The dough should still rise once more. I use the raising function in my Siemens oven. Then the raising process takes 20 minutes. This makes the job incredibly easy and takes less time. Alternatively, cover the buns with plastic again and leave to rise for 45 minutes.

Preheat the oven to 210 degrees above and below heat. If you have a steam oven, turn on medium steam. If you do not have steam, put a bowl of hot water in the bottom of the oven. This gives a bit of the same result. The bread gets better when you use steam. Then it takes longer before the crust begins to form and the toast gets to rise better in the oven.

Brush the buns / rolls with a beaten egg and sprinkle with a little more oats and sesame seeds. Bake for 20-22 minutes, depending on the oven, until they have a golden and nice color. Let rest in the pan for 5 minutes before placing it on a rack. This bread is best enjoyed fresh, but it also works to freeze the bread and eat at a later time. Enjoy a delicious break bread.
