Tortilla omelette - Super simple and good dinner made in minutes

A great trick for a quick and good dinner!

  • 2 pcs big tortillas
  • 50 gram grated cheese
  • 5 pcs slices tomatoes
  • 0,2 pcs sliced red onion
  • 5 slices boiled ham
  • 3 pcs eggs
  • 1 tsp baking powder
  • 200 gram spinach
  • salt and pepper
  • a little oil for frying

Two crispy tortilla chips stuffed with a delicious omelette with vegetables in the middle. When I saw this trick online I had to try. It works great and you can of course choose what you fill in this tortilla omelette. The job becomes easier with a "nonstick" pan with a lid. I have made a video where I show the whole process. You can see this a little further down in the recipe.

Step 1

Start by finding a frying pan you have a lid for. Set on medium heat. On a scale of 1-9, I used 6 all the time when I made this one. Put some neutral oil in the pan and place on a tortilla. Add the cheese, tomatoes, onions and ham.

Step 2

Whisk the eggs with a little baking powder and pour into the frying pan. Top with lots of spinach and finish by putting the last tortilla lefsa on top. Press down and put on the lid. Let it stand for about 5 minutes. The spinach will shrink considerably and the eggs will become an omelette. Turn the whole omelette and fry for 2-3 minutes on the other side with a lid as well. Transfer to a board and divide into 4.

Step 3
