Vegetarian Lasagna - The perfect Lasagna without meat!

Cheese sauce, tomato sauce, pesto and lots of vegetables!

Vegetarian lasagna

  • Pasta plates
  • cheese sauce (recipe below)
  • tomato sauce (recipe below)
  • fried vegetables (recipe below)
  • 8 tbsp pesto (see own link)
  • 100 gram jarlsberg
  • 2 pcs fresh mozzarella
  • 100 gram ridder cheese
  • 100 gram parmesan

Cheese sauce

  • 3 tbsp butter
  • 3 tbsp wheat flour
  • 7 dl h-milk
  • 50 gram parmesan
  • 50 gram ridder cheese
  • 0,5 tsp ground nutmeg
  • a little salt

Fried vegetables

  • 1 pcs onion
  • 1 pcs aubergine
  • 1 pcs squash
  • 1 pcs green peppers
  • 1 pcs red pepper
  • 1 pcs fennel
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp olive oil
  • 1 tsp balsamic

tomato sauce

  • 5 cloves garlic
  • 1 pcs onion
  • 1 tbsp olive oil
  • 2 tbsp tomato puree
  • 2 dl red wine / 1 tablespoon vinegar.
  • 2 bokser canned tomatoes
  • salt and sukker
  • 1 tsp chiliflakes

When I serve this, no one misses meat. In this recipe I show my tricks for how to make a perfect Lasagna without meat. I use lots of fried vegetables, a homemade pesto and a lovely cheese sauce. When this is added layer upon layer with pasta in between, it becomes incredibly good.

Step 2

I make the tomato sauce by finding a frying pan. Add olive oil and set on medium heat. Finely chop the onion and garlic and fry in the pan until the onion has softened. Add the tomato puree and cook for a few more minutes. Then pour in the red wine and let it boil down until the liquid is almost gone. Add the canned tomatoes and season with salt, sugar and chili flakes. Let simmer for 10 minutes and place in a bowl.

Pesto can be bought ready-made, but it is best if you make it yourself. It tastes better and it's easy to make. I attach a link here to homemade pesto. Homemade Pesto - Perhaps the most famous dressing from Italy.

When it comes to cheeses you can choose a little yourself, but I really like the combination of parmesan, knight cheese and jarlsberg. In addition, I use fresh mozzarella. Tear up and get ready. I use some of the cheese in the cheese sauce and the rest between the layers and for topping.

Making the cheese sauce is like making a regular white sauce. Start by melting butter in a saucepan. Add flour and whisk together to a smooth mass. Dilute with milk and season with salt and a little ground nutmeg. Add some of the grated cheese and turn down the heat.

Step 6

Now the funniest part remains apart from eating it. It's putting it together. Start with a little sauce and then add plates, more sauce, vegetables, nuts, pesto and a new layer of pasta. I distribute so I get 4-5 layers of pasta. It will be extra good if you put some cheese between some of the layers as well. Finish with cheese sauce, pesto and grated cheese. I like to add a few drops of olive oil and a little freshly ground pepper.

Bake for about 30 minutes at 200 degrees. Let it rest for 15 minutes before cutting it up. Now you can enjoy a wonderfully good lasagna without meat. There is also an instructional video on my Instagram profile. Good luck.
