Pasta Arrabiata is Italian everyday food - simple, cheap and very good!

This classic Italian dish originates from the area around Rome. Arrabiata means angry in Italian and probably refers to the fact that there is a lot of chili in this dish.

  • 500 gram pasta of good quality
  • 1 can canned tomatoes
  • 3 tbsp Extra virgin olive oil
  • 2 pcs red chili
  • 4 cloves garlic
  • 1 pcs lemon
  • 1 handful fresh parsley
  • 3 tbsp grated parmesan
  • 1 tsp sugar
  • 3 tbsp boiling water from pasta
  • salt and pepper

With simple dishes like this that have few ingredients, it is very important that you have good ingredients. A good pasta and extra virgin olive oil is a must. It is best when you use screws or pens because then it fills well with sauce on the pasta. A simple and good vegetarian dish that is quick to make and therefore suitable as an everyday dinner.

Step 1

Start by finding a large pan and a frying pan with a high edge. Bring the water to a boil and add a little salt before adding the pasta. In the frying pan, add olive oil, chili, garlic and lemon zest. Let simmer for a few minutes on medium heat.

Step 2

Add good canned tomatoes together with the oil and cook over medium heat. Add a little grated parmesan, sugar and salt. Dilute with 1-2 tablespoons of boiling water from the pasta.

Step 3

When the pasta is ready, pour off the water and add the pasta together with the sauce. Add finely chopped fresh parsley and squeeze over the juice of 1/2 lemon. Stir well so the pasta is covered with sauce. Transfer to a plate and serve. Top with a little extra parmesan.
