Wallenbergare - A Swedish classic with veal

Incredibly juicy and good burgers made with veal.

  • 1 kg Smak veal
  • 2,5 dl whipping cream
  • 2 pcs egg yolks
  • 2 tsp salt
  • 1 tsp white pepper
  • breading flour for breading
  • butter for frying

  • mashed potatoes
  • vegetables in browned butter

Step 1

In Wallenbergare, good veal must be used. I think it's easiest to buy a veal roast and grind the meat yourself. If you can buy veal mince, it also works great. If you grind yourself, cut the meat into strips and put in the freezer for 40 minutes. It makes the job much easier.

Step 2

Use the meat grinder and grind the veal 2 rounds. Then it is finely ground, and fat and meat mix well.

Step 3

When the meat is ground, add the salt and stir well. Then you get a tough and sticky mass. Dilute with ice-cold cream and stir well until you get a smooth and fine stuffing. Finish with white pepper and egg yolks. Stir well and the mince to make Wallenbergare is ready. Put in the fridge until you are ready to fry.

Step 4

Find a tray and place on baking paper. On the baking paper, sprinkle well with breading flour. Shape the burgers and add the breading flour. Finish by sprinkling some barbecue flour on top as well. This gives a very good crust and nice color.

Step 5

Fry on medium heat in well with butter. Bake for a few minutes on each side until they get a nice color and are almost cooked through. Wallenbergare is incredibly juicy and with a good taste of veal.

Step 6

As a side dish, mashed potatoes and vegetables are common. It is most common with peas in browned butter, but I think it is very good with carrots and radishes. Melt the butter and heat until it turns brown. Pour in the vegetable 1 minute before serving. I make mashed potatoes by boiling mashed potatoes like the almond potato and add well with butter and a little milk. Season with salt and white pepper.
