I have many times encouraged more people to buy whole chicken. In this recipe I will show how easy it is to grill a whole chicken. I have made a slightly spicy spice rub, but you can also buy many ready-made spice mixes. Butterfly or Spatchcock is a common method in the BBQ environment for cooking chicken. I've made an instructional video to show you how to do this.
Step 1
When working with food, it is important to always have clean tools and hands. Therefore, start by washing your hands and find a knife and sharp scissors. Take the chicken out of the package and turn it upside down. You have to cut off the spine of the chicken. Cut on both sides as shown in the video and cut across the leg in the middle. Now you can easily remove the entire leg that sits between the chicken breasts. Use the knife to remove the "ribs" in the chicken and extra fat.
Step 2
Transfer the chicken to a little aluminum foil or plastic wrap and sprinkle with plenty of spices. Make sure the spice is all over the chicken. Turn the chicken over and do the same on both sides. Leave the chicken to marinate in this spice mixture for a minimum of 15 minutes.
Step 3
Fire up the grill and here it is important that it is grilled on indirect heat. It does not mean directly above the heat source. Move the chicken lying with its breasts up to the grill grate and put on the lid. Try to keep a temperature of about 180 degrees in the grill if you can. It is always smart to use a thermostat when grilling. The grilling takes from 30-90 minutes. The chicken is ready when it has a crispy skin and a core temperature of about 65 degrees.
