Grilled Salmon with salsa - summery, simple and good.
In the summer it is delicious with some quick, good and healthy meals.
Ingredients
- 600 gram Frøya backloin
- 1 pcs mango
- 0,5 pcs red paprika
- 1 pcs avocado
- 1 pcs red onion
- 1 pcs lime
- 1 handful fresh coriander
- 2 pcs lemon slice
- 1 tbsp olive oil
- salt and pepper
Remember that you can choose between back loin and mid loin. In this recipe I have used backloin from Frøya Salmon. Here I serve the salmon with a quick salsa made from mango, avocado, onion, and lime. If you like a little spicy food, it fits perfectly with a little chili as well.
Step 1
Start by cutting the mango, avocado and paprika into small cubes. Put in a bowl and add the juice of 1 lime and a little coriander. Season with salt and pepper. Leave in the fridge until the salmon is done grilling. The salsa can be prepared in advance and the flavors will only get better if it has some time in the fridge.
Step 2
Cut a suitable piece of salmon, grease with a little olive oil and add a little freshly ground pepper. Fry the salmon on a fairly high heat in the grill or in a grill pan. Bake for 2-3 minutes and turn gently before frying for 1-2 minutes on the other side. I like the salmon best when it is not completely cooked through.
Step 3
Find a slice of good bread or focaccia that I have used in this recipe. It also goes well with salad or rice. Start by adding good to the salsa, carefully add the salmon and garnish with coriander leaves. Serve with a slice of lemon next to it.
You can make this quick, healthy and good lunch / dinner in less than 15 minutes.
