A creamy taste explosion - Malaysian inspired Chicken Rendang
There are a lot of flavors here and it tastes fantastic. This Malaysian inspired dish is a taste explosion !!
Ingredients
- 2 pcs chicken fillets
- 1 pcs china garlic
- 1 pcs red chili with or without seeds
- 1 pcs ginger about thumbs x 2
- 3 pcs spring onion
- 1 neve cashew nuts
- 1 can coconut milk
- 1 pcs lime
- 1 tbsp rice vinegar
- 1 tbsp soy
- 1 tbsp brown sugar
- 1 tbsp chili powder
- fresh coriander
The dish takes no more than 25 minutes to make and contains lots of fresh flavors. Here there is a lot of chili, garlic, ginger and spring onions. This delicious mixture is mixed with creamy coconut milk, herbs and fresh lime. This dish is not difficult.
Step 1
Start by coarsely chopping the garlic, chili, ginger and stalks from the spring onion.
Step 2
Put in a small blender together with rice vinegar and soy. Run to a smooth puree.
Step 3
Find a frying pan or wok and add a little neutral oil. When the oil starts to get hot, pour in the puree. Let this simmer on a fairly high heat until it starts to get a little oily (this takes about 5 minutes).
Step 4
Cut the chicken into thin slices and place in the frying pan together with the puree and sugar.
Step 5
Pour on the coconut milk and turn down the heat. Let simmer for 10 minutes before adding the nuts.
Step 6
In two minutes, the dish is now ready. Just before serving, mix in finely chopped spring onions and coriander. Squeeze over the juice of 1 lime.
Step 7
Serve with rice and enjoy this delicious Malaysian dish!
