Baby spinach salad with blue cheese and kiwi - Delicious flavor combination!!

So easy and so good!!




  • 1 bag baby spinach
  • 1 pcs avocado
  • 3 pcs spring onion
  • 1 pcs cucumber
  • 100 gram cashew nuts
  • 150 gram blue cheese
  • 1 pcs lime

Honey vinaigrette

  • 2 tsp dijon mustard
  • 1 tbsp honey
  • 0,5 pcs lemon (juice only)
  • 1 pinch salt
  • 2 tbsp extra virgin olive oil

Step 1

First pour the baby spinach into a bowl and cut up the rest of the ingredients. Remember to peel the kiwi before cutting it into slices. I squeeze a little lime juice over the avocado so it keeps the nice green colour.

Put everything in the salad bowl and now you can make the dressing. Mix all the ingredients for the dressing and stir well. Pour the dressing over the salad and it is now ready to serve.
