Spinach Pancakes - Nutritious pancakes for young and old
Green and healthy pancakes!
Ingredients
Spinach pancakes
- 5 dl skimmed milk
- 5 dl wholemeal spelled flour
- 3 pcs egg
- 1 tsp salt
- 1 bag spinach
- 2 tsp baking powder
Pesto dressing
- 2 tbsp creme fraiche lett
- 1 tbsp pesto
- a little lime juice
Suggestions for topping
- tomatoes
- ruccula lettuce
- fresh mozzarella
- pesto dressing
- fresh herbs
I saw this recipe on a cooking program recently and wanted to try it. I made some adjustments and here is my recipe for these delicious green pancakes full of nutrition. Superfood for both young and old. You can of course vary what you want to top the pancakes with.
Step 1
Measure out all the ingredients for the pancakes and put everything in a blender. Run until you get a smooth green pancake batter.
Step 2
Heat a "nonstick" frying pan and add a little oil or butter. I fry these pancakes on medium + heat and ONLY ON ONE SIDE. When the pancakes have got lots of small holes on the top and are no longer moist on top, they are ready. Just pour straight from the blender to the frying pan.
Step 3
Use the topping you want and serve piping hot. I topped with ruccula lettuce, mozzarella, pesto dressing, basil and tomatoes. If it is for small children, serve just as well with topping they are used to and want. It is anyway a tasty pancake full of nourishment and color. Good luck.
