Bacon rind + Chicken fillet = the best Chicken nuggets

Bacon rind is a perfect breading for chicken nuggets!

  • 3 pcs chicken fillet
  • 2 pcs egg
  • 1 dl wheat flour
  • 100 gram bacon rind
  • cucumber
  • salad
  • ketchup
Ingredients

Chicken nuggets are very popular with the little ones and it is very easy to make yourself. This recipe is quick to make and can either be served as dinner with, for example, fried potato boats or on a plate with some vegetables, salad and dip. The method is very simple and you do not need any fancy equipment.

Step 1

Start by cutting up the chicken into evenly sized pieces.

Put the bacon rind in a blender and run quickly until it is powdered.

Step 3

Pour flour into one bowl and eggs into another bowl. Whisk the eggs quickly with a fork. Place the bacon powder on a plate and you are now ready to make nuggets.

Step 4

Roll the chicken pieces first in the flour and shake off excess flour. Dip the chicken in the egg mixture and let it drain before you roll it around in the good bacon rind powder.

Step 5

Find a frying pan and pour in a little neutral oil at the bottom. Turn on medium + heat and wait until the oil has warmed up. Add the chicken and cook for 2-4 minutes on each side. You feel that the chicken is cooked through when they get a little harder if you press them. You can also use the thermostat to check if you want. A temperature of around 62 degrees will give an extremely juicy chicken.

Step 6

Place on a platter with a little salad, pieces of cucumber and sprinkle with a little extra bacon crisp. This was my son's dinner so then it was ketchup as a dip, but here you can of course make more exciting dips if you want. If you want to fix this in advance there is no problem. Place them in an fireproof pan and heat in the oven just before serving. Good luck.
