Banana Pancakes - Nutritious, healthy and delicious
Do not throw away the brown bananas!

- 2 pcs ripe bananas
- 2 pcs egg
- 2 dl oatmeal
- 1 dl milk
- 2 tsp baking powder
- 1 tsp vanilla paste

There is a big food waste in Norway and we throw away bananas far too much. They do not look as tempting when they start to turn brown, but then the sweet good banana taste comes out. Instead of throwing them, peel and cut into cubes. Put the cubes in a bag in the freezer for shakes or smoothies. You can also make banana pancakes! They take short time, lots of nutrition and low in calories. In this recipe, each pancake has only 87.5 kcal and they taste delicious!
Step 1
Measure out milk, bananas and oatmeal and pour into a blender. Add the eggs, bananas and baking powder. Run to a smooth mass in the blender.
Step 2
Bake in a nonstick pan or baking tray over medium heat. I pour the batter straight out of the blender into the pan. Pour a little slowly and make circles about 10 cm in diameter. Bake until they see small holes on top of the pancake. This takes 2-4 minutes. Turn them over and cook for another minute.
Step 3
Serve hot with some fresh berries, vanilla whipped cream and a little honey if you fancy a little extra sweetness. Banana pancakes are popular for everyone! Good luck.
