Barley salad with chicken - Healthy, simple and very good!
Barley groats are healthy, good and can replace rice in many dishes.
Ingredients
- 1 pcs Smak Forskjellen chicken breast with skin
- 2 dl barley groats
- 11 dl chicken broth
- 0,5 pcs cucumber
- 3 pcs tomatoes
- 1 pcs red onion
- 2 tbsp olive oil
- salt and pepper
- fresh herbs (oregano)
This recipe is easy to make and tastes really good! The barley salad is made with chicken broth for the good taste. Cucumber, tomato and red onion add juiciness to the salad.
Step 1
Start by boiling 1.1 liters of chicken broth. Pour in the barley groats and stir. This should cook for 20 minutes.
Step 2
Choose a chicken of good quality and preferably with skin on. Season the chicken and cook on the skin side for a few minutes until the skin starts to become crispy. Turn the chicken and place the whole frying pan in a preheated oven at 180 degrees. Cook for about 10 minutes or until the chicken has a core temperature of 61 degrees.
Step 3
Finely chop cucumber, red onion and tomatoes and place in a bowl. This should be mixed with the barley grout afterwards.
Step 4
When the barley groats have cooked, strain off the groats and pour into a bowl. Add the finely chopped cucumber, tomato and red onion. Pour a little well with good olive oil and mix well. Season with salt and pepper. Feel free to place a salad leaf on the plate, take over the barley salad and place the chicken fillet on top. Feel free to use some fresh herbs over at the end if you have any.
