Did you know that you can make a delicious risotto with barley groats?
- 2 dl barley groats from Coop Gullbygg
- 9 dl Smak forskjellen Apple juice
- 2 pcs shallots
- 2 cloves garlic
- 3 tbsp butter
- 2 dl finely grated parmesan
- 1 liten pose pine nuts
- 150 gram chanterelles
- 150 gram aroma mushroom
- 2 tsp soy
- a little fresh thyme
- salt and pepper
Barley groats are healthy and very good! It can replace rice in very many dishes. Here I have made a very good Byggotto with mushrooms. I also made an instructional video to show you how to make this dish. Buy barley groats next time and try this delicious recipe.
Start by pouring the apple juice into a saucepan and heat up. Find a frying pan and fry the pine nuts in a dry pan until they get a golden and nice color.
Find a slightly larger pan or a deep frying pan. Add butter and let it melt. Finely chop the shallots and garlic and fry in the butter until soft.
Add the barley groats together with the onion and cook for 1-2 minutes. Dilute with the hot apple juice and cook on a little over medium heat. Continue to dilute with apple juice.
Set the fried pine nuts aside and fry the mushrooms in the same pan. When I fry mushrooms, I always fry in a dry pan first. When the mushrooms have lost some liquid, I add butter, salt and pepper and turn down the heat.
Making a byggotto takes about 25 minutes to cook. It will be a thick but runny byggotto. Stir in some butter, parmesan, pine nuts, thyme and mushrooms. Taste with a little soy.
