This classic is perfect on a cold autumn day with some good red wine by the glass.
Ingredients
- 2 kg high ribs of beef
- 300 gram diced bacon
- 10 pcs shallots
- 3 pcs carrot
- 3 cloves garlic
- 4 tbsp wheat flour
- 1 flaske red wine (preferably from Burgundy)
- 1 pcs star anise
- 5 dl bull broth
- 2 pcs bay leaf
- a little fresh thyme
- salt and pepper
- butter for frying
- a little fresh parsley
If you have not tried this French classic, it's really time. The stew has tender meat, vegetables and baths in good sauce with a good taste of red wine. Serve with a good mashed potato and a good glass of red wine. Here I show you the method for the best possible result.
Step 1
Start by finding a large pan (preferably a cast iron pan if you have one) and a frying pan. Heat both. Put the bacon in the pan and fry crispy.
Step 2
Cut the meat into large pieces. Remove any tendons, but leave the fat on the meat. Roll the meat in the wheat flour and plenty of salt and pepper.
Step 3
Heat the frying pan and fry the meat on high heat for a few minutes so the meat gets a nice crust. When you have finished frying, pour some water or wine into the frying pan and fry out what has been "scorched". There is a lot of good taste here. Pour this into the pan.
Step 4
Put the shallots, carrots and garlic in the pan together with the bacon and continue to cook over medium heat until the meat is done.
Step 5
Pour in the red wine and broth, and bring to the boil. Add bay leaf, star anise and a little fresh thyme. Add the meat and turn down the heat so it steam / cooks. Here I use a Siemens temperature control on the pan. With this smart meter you can set the desired temperature and the hob arranges the rest. I use 95 degrees. Let simmer with lid for 2-3 hours.
Step 6
Just before serving, I fry mushrooms in a frying pan together with a little butter, salt and pepper. Pour into the pan just before serving. Sprinkle with a little finely chopped parsley just before serving.
Step 7
Now this delicious French classic Beef Bourguignon is ready. Serve with mashed potatoes and a good glass of red wine from Burgundy. Good luck.
