Beef Rendang - Malaysian beef stew with lots of delicious taste!

These flavors attract me! Delicious stews with lots of flavor and coconut milk have become one of my favorites lately. Chili, garlic, ginger and coconut abound here.

  • 800 gram Entrecotè
  • 100 gram dried coconut
  • 4 pcs chili with seeds
  • 8 cloves garlic
  • 1 pcs onion
  • 1 pcs ginger (about the size of a thumb)
  • 1 pcs lime
  • 2 can coconut milk
  • 4 pcs spring onion
  • 2 pcs shallots
  • rice
  • neutral oil
  • salt and pepper

The key to these dishes is to find a good balance. I give you a very good starting point, but it is important that you taste and adapt to your own taste. A fantastic meal with delicious tender beef topped with some fresh herbs and fried shallots.

Step 1

Start by finding a frying pan. Fry the coconut in a dry pan until it has a golden brown color.

Step 2

Stir a little occasionally. Find a mortar or use a food processor. Crush together garlic, chili and ginger until it becomes a completely mashed consistency (batter).

Pour the browned coconut mass together with the batter and the juice of 2 limes. Run smoothly with the food processor or mash to a smooth mass. Divide the meat into suitably large pieces (about 2x2cm).

Find a frying pan, pour in a little oil and burn the meat so it gets a little browned on the outside. Find a pan and pour in a little more oil. Add the coconut and chili batter and finely chopped onion and let it cook in the pan for 15 minutes until you see it separate a little and become a little oily.

Step 5

Now it's time to put in the browned meat. Stir well before pouring in the coconut milk. Turn down the heat and let the pan simmer for 2 hours.

Season with salt, pepper and possibly a little more lime juice before serving. Just before the pan is ready, pour a little neutral oil into a frying pan and fry the shallots in strips until golden.

Step 7

Let the onion drain on a paper towel. It makes it crispy and nice. Finely chop some spring onions and coriander and add to the pan just before serving.
