I love Blinis with roe of capelin!
Ingredients
Blinis
- 3 dl whole milk
- 3 dl buckwheat
- 1 dl wheat flour
- 2 pcs egg
- 1 ts toppet dry yeast
- 50 gram butter
- 1 tsp salt
- butter for frying
Accessories
- 1 pcs finely chopped red onion
- 1 can sour cream
- fresh dill
- Roe of capelin
This snack or appetizer is very good! Perfect with a glass of champagne. Roe of capelin is very expensive, but tastes fantastic!
Step 1
Start by heating the milk to about 37 degrees. Pour in the dry yeast and stir. Dilute with flour and salt and mix to a smooth mass. Put on plastic wrap and leave outside for 45 minutes.
Step 2
Separate the eggs so you have egg whites in one bowl and the yolks in another. Melt the butter and cool while the batter rises. Whisk butter and egg yolks into the batter and beat the egg whites until stiff.
Step 3
Using a spatula, mix the stiffly beaten egg whites with the batter.
Step 4
Find a frying pan and set on a little over medium heat. Pour the batter into small pancakes and fry on both sides. Check out the video to see instructions.

Place the Blinis on a plate and add some sour cream, finely chopped red onion, roe of capelin and fresh dill.
