Broccoli and avocado soup

This is a very good and nutritious soup that is suitable for both dinner and supper.

  • 1 pcs shallots
  • 1 liter chicken broth
  • 2 pcs avocado

  • salt and pepper

Step 1

Finely chop the shallots and place in a saucepan with a little olive oil over medium heat. Divide the broccoli into small "bouquets" and divide the stem into small squares.

When the onion has become soft and shiny, add all the broccoli to the pan. Then add chicken broth and cook on the way. After about 5 minutes, pick up some nice broccoli bouquets (for garnish) and continue cooking.

When the soup has boiled for about 15 minutes, set the pan aside and run smoothly with a hand mixer. Add the avocado and continue using the hand mixer. In this soup, it is the avocado that gives fullness to the soup. It is important that the soup does not boil after you have added avocado. Flavored for the soup with salt, pepper and lemon juice. Feel free to use a little cayenne pepper if you want the soup a little extra spicy.

Step 4

Pour the soup into a plate, garnish with a little broccoli and sour cream. Add a few drops of olive oil and a little freshly ground pepper.
